Colombian Coffee Tiramisu

**Colombian Coffee Tiramisu**

*Ingredients:*
- 250g mascarpone cheese
- 2/3 cup strong Dorado Martins coffee, cooled
- 24 ladyfinger cookies
- 3 tablespoons coffee liqueur (optional)
- 2 tablespoons cocoa powder
- 2 tablespoons powdered sugar
- Dark chocolate shavings, for garnish

*Instructions:*

1. In a mixing bowl, whisk the mascarpone cheese until smooth. Gradually add the cooled Colombian coffee while continuing to whisk until well combined.

2. If using, stir in the coffee liqueur into the coffee and mascarpone mixture.

3. In a shallow dish, pour a small amount of the coffee mixture. Dip each ladyfinger cookie briefly into the coffee mixture, ensuring they are soaked but not overly saturated.

4. Arrange a layer of soaked ladyfinger cookies in the bottom of a serving dish or individual glasses.

5. Spread half of the mascarpone mixture evenly over the ladyfingers.

6. Repeat with another layer of soaked ladyfinger cookies and the remaining mascarpone mixture.

7. Sift cocoa powder and powdered sugar over the top of the tiramisu.

8. Cover and refrigerate the tiramisu for at least 4 hours, or preferably overnight, to allow the flavors to meld and the dessert to set.

9. Before serving, garnish with dark chocolate shavings.
